I think you should be able to install LuCI

opkg -dest usb install luci

I haven't tried it myself though.

Been experiencing problems with the (default) access point configuration, so have tried to install luci, in case the web UI sheds some light on what I might have wrong.

So having followed the instructions luci (and uhttpd) packages appear to be installed. However, uhttpd doesn't appear to be running and trying:
/etc/init.d/uhttpd start

gives the response:
service: file '/usr/sbin/uhttpd' is not executable

I'm thinking this needs a symlink since uhttpd and luci are installed to the USB drive. However, the following doesn't seem to work:
ln -s /mnt/usr/usb/sbin/ /usr/sbin/

Any help is more than welcome.

Since both folders already exist and have stuff in them you need to symlink the files instead. See nmap example on build script

ok, so tried:
ln -s /mnt/usb/usr/sbin/uhttpd /usr/sbin/uhttpd instead

uhttpd now runs but shown no web content (i.e. not the LuCI content)

Another symlink is needed for the web content
ln -s /mnt/usb/www /www

but the web page then says "No such file or directory" which I think is since the system needs access to the CGI libraries, so I added...
ln -s /mnt/usb/usr/lib/lua usr/lib/lua

but to no avail.

Feel I'm getting closer. Any ideas?

Just got mine working!
I think you're still missing the fellowing symlinks.

ln -s /mnt/usb/usr/lib/liblua.so.5.1.4 /usr/lib/
ln -s /mnt/usb/usr/lib/lua/ /usr/lib/
ln -s /mnt/usb/usr/bin/lua /usr/bin/
